Chia Seeds – Pudding recipe

Scrolling my instagram feed I always run across wonderful pictures of smoothies, yoghurt bowls and puddings, and they all have a common thing: chia seeds.
I have always wondered why everyone uses these little black seeds since the first time I have seen them, and now I found the answer I decided to try a little recipe.
Chia seeds have a lot of nutrients, like the high amount of calcium, magnesium, phosphorus and vitamins (C, B1, B2, B3), and you can really use them everywhere!


They don’t really have a taste. If you leave them to soak in a little milk for some hours, they will just add a little something similar to a very delicate mint flavour, but these little seeds are actually capable of creating a pudding from some milk all by themselves! If you want to make a delicious vegan, gluten free and healthy creamy pudding, this is the recipe you’ve been searching for.


What you will need (for 1 portion):

150gr of soy milk
some drops of vanilla extract
1tbs stevia or 2tbs sugar
3 spoons of chia seeds
2tbs maple syrup
fresh fruit

Add the vanilla extract and the stevia/sugar to your milk, then put the chia seeds in and mix it all together. Cover and leave it in the fridge for half an hour. Take it out and mix it again, then leave it in the fridge for at least two hours. You can also leave it for all the night if you eat it for breakfast and keep it for 2 days if you want to make more portions in one time!


Decorate it with some fresh fruit of your choice and the maple syrup. I went for strawberries, blueberries, blackberries and raspberries, they blend perfectly with the flavour of the pudding… and the color was just right for taking some pictures on my pink fur carpet!
